Welcome to Around my Table, a monthly post where I will share foods I'm cooking, a table I set (if I entertained that month) and tidbits that are on my mind.
March
March started out with travel to Charleston and Florida for trunk shows. I returned home to my son, Brandon, home from college for his (two week) spring break. I know there are other places he would rather be but he has appointments at home -- so to Boston he came.
My tables this month are focused on family dinner. We are short one, Carter, as he is traveling for his spring break. I am leaning heavily on Caroline Chambers' newish book What to Cook When You Don't Feel Like Cooking because I have lost my cooking mojo lately. She has great family friendly and quick recipes that use many ingredients I keep on hand. I also cook from ALL of the Barefoot Contessa cookbooks regularly. Many recipes I now know by heart. I have been a diehard fan of Ina since my twenties and cooking almost exclusively from her cookbooks until more recently.

Parmesan Chicken, Barefoot Contessa
Caesar Salad with leftover Parmesan Chicken --
Steak with the best roasted sweet potatoes (not sure of the actual recipe, I use a method someone taught me: slice SP in half lengthwise and place on a cookie sheet with parchment paper, cut side down. Drizzle some olive oil, sprinkle with kosher salt and place into a cold oven. Turn oven to 425 degrees and roast until soft inside and caramelized and gooey on the cut side.
