Hello January, nice to see you. 2022 I have high hopes for you. Like so many of us, I start every January with goals of eating better and moving more. I don't believe in New Year's Resolutions but I do believe in trying to "do better."
In my efforts to eat better, I made these "healthier" blueberry muffins. Made with almond flour, coconut oil and your "healthy" sweetener of choice. And because I think food that looks pretty always tastes better, I dressed them up with a sprinkle of real sugar and extra blueberries. Putting them in a favorite basket lined with a handwoven hand towel makes an every day breakfast becomes a treat!
